Marvelous In My Monday

It’s Monday and every Monday Katie at Healthy Diva Life, host the Marvelous In My Monday party.  I’ve decided to join her in the Marvelousiness.

It was a Marvelous Lazy Saturday with a little shopping at guess where, Target of course.  I found some clearance items for food storage that’ll be great for taking my lunch to work. To make room for the new, I had to get rid of the old, I’m donating it to Goodwill.  I haven’t used these in almost a year, so time to let someone else make good use of them.

Sunday was Marvelous baking day.  I found a recipe for Greek yogurt cake on Healthy Recipes Blog, and it inspired me to do some baking. I changed a few of the ingredients, instead of eggs I used one tablespoon of ground flaxseed to three tablespoons of water, for each egg, whole wheat pastry flour,brown sugar, because I didn’t have white sugar. (I don’t use very often) and 1/4 cup of almond milk.

It turned out to be such a moist delicious cake.

Sunday dinner was a Marvelous pasta dish.  I tossed together steaming hot angel hair pasta, red sauce, pesto sauce, freshly grated parmesan cheese and spicy soy chorizo.

Today is truly a Marvelous Monday, its spring break, I took the day off and I am spending it with my teen daughter.

  2. mmm chorizo…I am always wary about what is exactly in it (even tho I love the flavor) so I may have to try the soy kind!
