MIMM #7 and My Relaxing Hobby


When life becomes hectic we all need to find ways to relax.  Marvelous Chamber of Commerce weather this weekend allowed me to get in some runs which always helps me relax. Something else I find relaxing, is making natural body care and fragrance products.  What I like most about this hobby is the creative process and making something that is uniquely mine and free of chemicals that may cause allergic reactions. Marvelous!


 Mother’s Day is coming and they make Marvelous gifts.  A few years ago I took a short course on soap and lotion making from a local candle and soap making supply company and learned enough to make my very own lotions and potions. You can even make facial cleansers and moisturizer.   The company was sold and the new one doesn’t offer classes, but there a plenty of online sites that offer helpful information.

WIAW and Spring on Holiday

Happy WIAW!  Spring took a little holiday Tuesday here in Texas. Just the night before I was running in Nike shorts and a sleeveless top. Tuesday it was cloudy, cold and windy.   I started my day with a banana protein smoothie and when I arrived at work I had one cup of coffee, (not pictured).  I made a rice paper veggie wrap tucked inside romaine lettuce with a side of baby carrots, grape tomatoes and lemon pepper hummus.  During the afternoon I snacked on blackberries, chopped mango and a banana with lots of water.  For my dinner I made a kale, baby bellas, vegan cheese and ground flaxseed scramble, scooped inside lettuce. I spiced it up with red pepper flakes.


Before bed I did 8 minute arms and 8 minute abs

 Feels like the longest 8 minutes during both of the workouts.

MIMM #6 and A Very Berry Day



Marvelous was my weekend! The weather was absolutely beautiful.  Sometimes our busy schedules can get us off track, and that’s ok as long as we don’t stay off track. Honestly I haven’t worked out as often as I should have in the past few weeks, but I changed that this weekend with a good run and 8 minute ab workout I found on The Hungry Runner Girl.   Really works the abs.  Link to ab workout.

Now some of my weekend eats!

I had a Very Berry Sunday!  Marvelous Kale Slaw with Strawberries, Chocolate Soy Yogurt Pudding parfait, I used crushed Oreo crumbs between the yogurt layers and I mixed organic raw cacao powder with soy yogurt to give the yogurt a rich chocolate flavor. Cacao is rich in antioxidants and flavonoids, great source of magnesium, iron, vitamin C and a natural source of theobromine.  My final berry recipe was a  refreshing Strawberry Cocktail.  I blended strawberries, mixed with coconut water and strained thru sieve, mixed with Vodka and Grenadine syrup. You can omit the vodka and easily make it a mocktail if you like.

I had some zucchini I needed to used, so I made some Marvelous Zucchini Crisp.  Instead of egg, I dipped the zucchini in a flax water mixture and then in Panko bread crumbs for a crispy crunch.  I promise I will post the recipes very soon.

Can you believe it’s another WIAW? Just 1 and 1/2 months to being half way thru another year. Today my eats are from Tuesday, and WOW what a Tuesday it was, somebody pushed the fast forward button and forgot to push play.  Lately my days have been 10 to 12 hours long and that makes my nights seem  short. Monday it felt shorter after being up late reading and watching the sad news about the Boston Marathon. I was unaware of what had happened because in my work once I’m inside it’s a child’s world, (I work with children). I was told the news by a parent who came to pick-up her child, she said when she heard the news she thought of me because she knows I run marathons. My heart and prayers go out to all affected by this terrible tragedy.

 It was full speed and straight ahead from the moment my feet hit the floor Tuesday, I was a little rushed so I threw some food in my lunch tote and headed out the door to work. It all turned out fabulous! I think the key to eating healthy is having healthy food choices available. I keep a bowl of fruit on my desk, and I have a small fridge in my office to keep water and other healthy snacks on hand. So when I’m rushed and haven’t planned as well, I still have healthy eats available.

After getting settled at work my breakfast was whole wheat toast with sunflower butter, sliced bananas, chia seeds and a cup of coffee. I keep a supply of chia seeds in my office fridge.I like adding them in cereal and on salads.


Lunch was a thrown together kale salad. I pulled the kale from the stems, sliced cherry tomatoes, red onions, smashed avocado into salad and sprinkles on some nutritional yeast, another item in my office fridge and I threw in some dried cranberries just because.  This salad was better than good. You got to try it!


I wasn’t very hungry so dinner was zucchini, daikon, carrot salad with citrus ginger dressing I prepared by mixing the juice from one navel orange and about 1 tablespoon of Whole Foods organic soy ginger sauce. I used my handy dandy spiralizer to chop the daikon and zucchini.

MIMM #5 and Lymphomathon



WOW what a beautiful weekend we had, it was the perfect weather for the Lymphomathon 5K walk. I participated in the walk this weekend in support of my Assistant Director’s mother who is a survivor.  After registration Minerva,(my assistant), pins her daughter and friend I’m Walking For signs on their backs.

There was a small ceremony and cheers before we started the walk.


It was a great turnout of teams to support a great cause.

My Fit Foods was founded in 2006 in the apartment kitchen of a personal trainer who was dedicated to ensuring his client’s achieved the results he promised. Out of the spirit of service, founder Mario Mendias, started cooking meals for his clients who were too busy to shop and prepare healthy meals with a time crunched schedule. The client’s fitness results spoke for themselves! Soon Mario was not only cooking for his clients, but all the clients in the gym



It wasn’t  Marvelous when I grabbed the cookie butter and there was none.  My daughter finished it off and didn’t get rid of the jar.  So I went to Trader Joe’s to get more and was told that they were all out until mid May, imagine my disappointment. ;(

Baked Tofu Strips coated with seasoned panko crumbs and vegan cheese with a side of manaria sauce.

Homemade pesto and tomato pizza topped with vegan cheese and for dinner on Sunday, I prepared vegan crock pot chilli with great northern beans.


It was a Marvelous weekend and I am ready for a Marvelous week.

WIAW #19 Eating Leftovers

Happy WIAW!!  Have you ever had those days where you are so busy and the day just flies by?  Monday was that kind of day for me, so having leftovers was a great help.   It was such an early start, I had breakfast at my desk.  Leftover carrot flaxseed muffins I made on Sunday with a cup of coffee.


Lunch was leftover boccoli/brussel sprouts pasta topped with nutritional yeast from Sunday night’s dinner.

I finished off the last of the veggie enchiladas from Saturday’s dinner for Monday’s dinner.  It was topped off with home made Pica de gallo and guacamole. Dosen’t it look tasty?


I want to be more like Lindsey and prep my weeks meals on Sundays.  Haven’t gotten that far yet, but I working on it! Not having to cook Monday felt great and gave me more time for a good workout.

MIMM #4 and Cleaning My Fridge



I had a Marvelous relaxing weekend.  I hope every one of you did the same.  I cleaned out the fridge this weekend and in doing so I created new recipes from veggies that needed to be used.

After juicing several carrots, an apple, a whole golden beet, I used the root, stems and leaves and one lemon, I blended the juice with vanilla protein powder to make a fantastic carrot smoothie.


I used the carrot pulp to make some Carrot Cranberry Muffins. I topped the second batch with some oats and brown sugar crumble. They were good, but I think the recipe needs some tweaking.


Sometimes I overdo it at the grocery and buy too much, and with my busy weeks even thought I have good intentions I just can’t get around to preparing all I purchase.  So for dinner I sautéed brussel sprouts and baby broccoli to make a pasta salad.  After chopping the veggies I put the veggies I didn’t use in freezer bags to freeze for future use.   Marvelous way to have fresh veggies on hand.   Dinner by the way was Marvelous!!!

It’s going to be a Marvelous week!  I have a new supervisor at work so this week all of the Center Directors will be meeting with him. It will be a chance for him to get to know each of us better and for us to learn a little more about who he is and his expectations. I’m looking forward to the meeting.
