My Marvelous Week In Photos

MiMM Marvelous was my experience last week, in the Magical World of Disney at Coronado Springs Resort.  I am sharing my Marvelous week with photos from my trip, which was an amazing work event.

I was on a very early flight Monday morning, so I had breakfast from Einstein Bagels at the airport, it was a tasty egg, spinach, mushroom and swiss bagel sandwich and a Blue Machine Naked.

MIMM #31 and Forced to Change My Route

Happy Monday!

I hope everyone enjoyed the weekend.  I started my weekend with a 4-mile run that almost didn’t happen, because I woke up Saturday with a headache.  I suspected it was a dehydration headache because I didn’t drink my normal amount of water during the day Friday, I hardly spent any time at my desk, my assistant was out sick so I was everywhere.  So I got up drank lots of water and two and a half hours later I was headache fee and on my way out the door.

I have been running the same route for a few weeks now, but lately there’s a bird that sometimes attacks runners on the route. One runner was attacked in his head and blood was involved. Twice while running this bird flew at me coming so close I had to duck out-of-the-way.

 I was reminded of the Alfred Hitchcock movie “The Birds”, where all the people in the town are attacked by birds, as a child after seeing that movie I was afraid every time I saw birds flying in the sky.

So I decided this weekend to change it up, which turned out to be a good thing. My new route challenged me because it has some hills.   Changing routes is a good thing for several reasons, it can be a challenge to run a new route which has different elevations, it offers new scenery and it can be safer to not always be predictable and run the same path.

After my run I made some protein pancakes with strawberry sauce and fresh sliced strawberries.  I took a simple mix with water honey wheat pancake mix and added 3 tablespoons of ground hemp seed.  For the sauce I blended a few fresh strawberries with some agave nectar and added the sliced strawberries on top.

Marvelous was me changing my route, the hill challenged me and I felt good afterwards and I didn’t have to worry about the attacking bird.

Halfway thru the week and I hope you are having a good one. Today I’m sharing my eats from Sunday.  Every third Sunday I volunteer in the church nursery, so it was an early rise not much time to cook, so I had two nectarines and coffee in my reusable Starbucks cup, I’m keeping my goal for the year to reduce waste.

When I returned from church I prepared a breakfast taco, simply spreading the tortilla with chickpea quac before adding scrambles egg with cheese and tomatoes.

Lunch was a basil, tomato and quac panini with a side of fresh sliced pears.

I have been hearing a lot about Naked lately, so I gave the mighty mango flavor a try along with a bowl of cherries for a late afternoon snack. I liked the smoothness of the Naked, but I do think I would prefer a berry flavor.

Dinner was pasta salad with tomatoes, red onions, sliced olives and shredded coby jack cheese on a bed of spinach and I sprinkled hemp seed on top.

I have been using this recipe a lot lately because it’s so fast to make, but I need to mix it up a bit.

My friends who have moved to Houston were in town this weekend to get their house that they have sold ready for the movers. It was so great seeing them again, I really will miss having them live close by.  I have known Leonard since elementary and his wife Kim for the past few years they have lived in the Dallas area, they are both wonderful, fun to be with people.  I will miss them, but now I have an excuse to travel to Houston.

WIAW #30 – How I Ate My Leftovers

Happy Wednesday, I hope everyone is having a great week!

In this weeks WIAW I’m sharing How I Ate My Leftovers this past Tuesday. I have to go out-of-town for business so I’m trying to clear out my fridge. For breakfast I used a leftover focaccia roll to make a banana panini.  On one side I used cocoa almond spread and the other sunflower seed butter and the bananas were smack dab in the middle. If you haven’t already, you have to try this, so, so, so good with a cup of coffee.

Lunch was leftover black bean and fennel soup  from Sunday and I threw in some leftover roasted sweet potato slices. Yum, yum!

For dinner I used leftover grilled tofu on top of a tasty spinach salad with a drizzle of balsamic glaze. I tossed in some dried cranberries and it took the salad from good to grrreat!  I love adding dried cranberries to my salads.

My snacks were not leftovers, I tried a new to me yogurt for morning snack, Nostimo greek yogurt, it was the black cherry flavor–loved it. Afternoon snack, string cheese and bottled water.

Rainy Day Cool Down

Sunday was a rainy day cool down, instead of high 90’s or 100 degree temperatures it was in the low 70’s, how great is that!

The cooler temperature made me nostalgic for a cold weather meal, so out came my crock pot, and into it I put…

Fire roasted tomato sauce, I blended the dates with some of the sauce before adding the sauce to the pot, this is optional, I just like the flavor it gives, it balances out the acid in the tomatoes.

Red onions, fennel and red peppers were sauteed just until they started to soften.  I added the sauteed mix to the crock pot along with a can of rinsed black beans, fresh tomatoes, and sweet corn.

The first time I tried fennel, it was raw in a salad and I didn’t like it. Fennel is definitely one of those foods for some a taste has to be acquired. I have found that cooked fennel has a different taste and I like much better.

Everything went into the crock pot and a few hours later, it was time to enjoy!

I purchased some lusciously sweet fresh figs this past weekend and was eager to use them.

Some of the health benefits of figs are that they are a good source of potassium and minerals that help to control blood pressure. They are high in fiber, contains calcium and has trace amounts of manganese. However, figs contains oxalate, a naturally occurring substance foun in plants, animals and humans. When oxalates become too concentrated in the body, they crystallize and can cause kidney or gallbladder stones.

I sprinkled washed and cut figs with organic coconut sugar and cinnamon and roasted them in a 375 degree oven for about fifteen minutes, they were served on top of some creamy greek yogurt, drizzled with honey, next time I will drizzle with a honey balsamic glaze.

Running Slow to Become Faster

Marvelous is that Katie at Healthy Diva Eats had her beautiful baby boy Rocco last week and is at home enjoying her first week of sleepless nights, diapers, snuggles and lots of kisses.

I wish her and her family all the best.

For the past week I’ve been up and out by 6:30 having some Marvelous runs and this weekend I had a Marvelous 7 mile run, wanted to do more, but decided to play it safe and stick with the training plan to lessen the chance of injury.

I came across a great video share from Janae at The Hungry Runner Girl, that was sent to her from her running coach. GOING FAST THROUGH GOING SLOW.  It’s a video from running expert Bobby McGee, while you’re on his site you can sign-up for FREE Run Training Videos.

I have to admit I don’t always stretch as I should sometimes, but lately I have been stretching everyday to avoid injury, and  that’s a Marvelous thing!  In addition to the Jillian Michaels Yoga Meltdown DVD I’ve been using  the Ten Zen DVD to help keep me on track and keep my goal of adding yoga to my workout routine this year. I am feeling Marvelous.

I’ve been wanting to try a veggie burger recipe I pinned on Pinterest, finally tried it this weekend.  I made several changes to the recipe, lets just say I was inspired by the recipe. I didn’t have carrots, (daughter ate them all), the only oats I had were hard oat groats. so I used celery in place of the carrots and hemp seed for the oats, and I forgot to add in the egg since I don’t eat them very often. Still turned out Marvelously great, when my picky seventeen year-old says something is good, it’s good.

One Year Ago Today – Long Run Saturday!

A year ago today I clicked Publish for the first time!  I had no idea I would meet so many wonderful people willing to help and encourage me along the way. I have learned that the blogging community is a wonderful collection of people who put heart and soul into their blogs, sharing their knowledge and experiences and are willing to help each other.  I hope that thur my next year I get to meet some of these wonderful people face to face.

And now from the archives my very first post: Long Run Saturday!

 

Ready set go! On my way out for a long run. I so look forward to my long run Saturdays, it’s my time to let go, think and mentally prepare for the new week ahead.

After my runs I blend a power packed green smoothie. Today I used curly kale, lacinato kale also know as dinosaur kale, and spinach as my greens, two cups of almond-plus milk, two bananas, chia seeds and ground flax seeds , Raw Protein Powder and Advocare Spark Powder.

Kale has protein and fiber and is high in beta carotene, vitamin k, c, lutein, zeaxanthin and calcium. Kale like broccoli contains sulforaphane, especially when chopped or minced. Sulforaphane is a chemical with strong anti-cancer properties. Spinach is a good source of niacin,zinc and has some protein and is mildly anti-inflammatory.

I use So Delicious Dairy Free Almond Plus milk,it has 5 grams of protein in each 8 ounces.

Chia seeds is a power packed seed. Chia seeds are the richest plant source of Omega-3 which is a vital fat that protects against inflammation. Chia seeds contains more Omega-3 than salmon and 1 ounce of chia seeds contain 4 grams of protein and chia is also a rich source of calcium. Flax seed is the other tiny seed with a powerful punch.

Flax seeds also high in Omega-3 fatty acids,high in fiber and very low in carbohydrates. Flax seeds are also high in most b-vitamins,magnesium and manganese. Also high in phytochemicals, this may be our best source of lignans, which converts in our intestines to substances that help to balance female hormones. There is some evidence that lignans may promote fertility, reduce peri-menopausal symptoms, possibly help prevent breast cancer and it may also help prevent Type-2 diabetes.

Bananas have B6 a good source of fiber, vitamin c, potassium and manganese.

I blend all of the ingredients in my high-speed blender and a few minutes later I have myself an awesome after workout smoothie.
