I’m one year older and feeling Fabulous and Marvelous!

It was forecasted for rain all day Sunday, but it was sunshine and blue sky instead. I say it was a custom-made day for my birthday.

My mother has been visiting me for the past week, so it was really nice to be spending my birthday with her. She is now on her way back to Georgia, I will miss having her around.

I spent my day doing a little shopping  with my Mom and relaxing and enjoying good food.  Dinner was polenta with roasted vegetables, so good.

My daughter found a mug cake recipe on Pinterest that she simply loves, but it’s loaded with calories. I’ve been playing around with the ingredients, and I’ve come up with this skinny version. In place of the sugar I used monk fruit sweetener.  This is a new sweetener on the market made from vine-ripened monk fruit and it has 0 calories. Monk fruit is native to southern People’s Republic of China and is used for medicinal purposes, as well as a sweetener. For more info on Monk fruit click here.  Using regular sugar this cake has 702 calories, the skinny version has 444 calories.

Simply Marvelous


After a rainy Friday, I stepped outside Saturday morning to this beautiful view.


The morning was cool and crisp, Simply Marvelous weather for running, I was so happy, I was kinda gitty during my run. The temperature change made it feel more like fall, good thing, Sunday was the first day of fall, sometimes called autumn.  Why is it fall the only season with two titles?  Oh well that doesn’t matter, what matters is that I had a Simply Marvelous weekend enjoying fall things.


After seeing all these pumpkins, I was in the mood to bake something with pumpkin, so I whipped up some Pumpkin Blondies. These things are yummy. You can get the recipe over at The Whole Serving.

Around this time of the year one of the favorites at Starbucks is Pumpkin Spice Latte, but I’ve found a money-saving copycat recipe over at Averie Cooks. This recipe uses all-natural ingredients, no fake syrups, and taste great too.

Leftover Heaven


Happy, Happy Wednesday!

It’s been several weeks since I’ve shared my eats, so here we go.

Smoothies are my go to breakfast, because they can be loaded with so many power packed foods to give me real energy.  I used leftover bananas and kiwi from last week that I froze in the freezer, in addition to kale, spinach, hemp seed, almond milk and juice from one orange.  If you have fruits or veggies you can’t seen to eat before they are past their prime, just freeze them, but do peel your bananas before freezing.  Frozen fruits, simply make smoothies taste better.

Jump Start Breakfast

I couldn’t think of a better way to use leftover vegetarian chili, than on top of some oven baked potatoes and topped of with red onions, tomatoes, jalapenos and a sprinkling of cheese. Such a wonderful lunch.


Leftover kale, mushroom and onion saute was paired with bulgur to make the most delectable dinner. I added chickpeas and sprinkled with some 21 seasoning salute from Trader Joe’s and dinner was ON!


One of these leftover brownies, I made on Sunday, hit the spot about 2:30pm Monday, before picking up a bus load of school-age children.

Snacks were the only meals I didn’t use leftovers. When I first tried these almonds, I wasn’t sure I would like them, I’m not a big, big chocolate eater.  It was kinda like you eat one and you think, that’s OK and then you think, that’s really OK, I want more.

Worlds Quickest Soup and Tasty Tuesday

Creamy Summer Squash Soup with Greek Yogurt

This has got to be one of the world’s quickest and easiest soups! I had a late lunch Monday, so I wasn’t very hungry, I had some zucchini and yellow squash in the fridge, wanted something light add easy, so I decided to make soup. Chop, throw into saucepan, season, cook until soft and tender. Transfer to blender, add some greek yogurt and pesto and blend until smooth. Pour into bowl, top with a bit more pesto, sprinkle with parmesan add some crusty bread and it’s time to enjoy. This soup was good, it was very good.  I think you can make with just about any vegetable and if you like a more chunky soup, just reserve some of the veggies before blending to stir in before serving.

Simple Nutrition-Give It A Try

Living a healthy lifestyle through exercise and diet are very important to me, so when I was asked to give Simple Nutrition, a new online personal nutrition tool for Safeway, Tom Thumb and Randalls grocery chain a try, I was thrilled. The program is developed by registered dietitians to help make it easy to shop for products that fit your nutritional needs.

It is so easy, you simply sign-up, sign-in and tell it what you need or want and the tool gives you food choices based on your criteria. You make your choices, create your list, and then go shopping.


Armed with my list, I was ready to shop!   First stop was fresh veggies and fruits, my favorite place in the store.




I love this stuff.


I can’t drink regular milk, so non-dairy almond is my choice.

I’m trying to reduce the sugar in my diet and this cereal has less of it.

I put some of those fresh veggies together to make these awesome dishes. I roasted the veggies in the oven once, but used them twice in two different recipes. Dish one was roasted veggies served on top of creamy polenta with chopped kale, dish two, an open-faced sandwich served with romaine and spinach salad.

My overall thoughts about this program is that it’s a great tool to help anyone meet their nutritional goals, and that ‘s a Marvelous thing.
