I’m one year older and feeling Fabulous and Marvelous!
It was forecasted for rain all day Sunday, but it was sunshine and blue sky instead. I say it was a custom-made day for my birthday.
My mother has been visiting me for the past week, so it was really nice to be spending my birthday with her. She is now on her way back to Georgia, I will miss having her around.
I spent my day doing a little shopping with my Mom and relaxing and enjoying good food. Dinner was polenta with roasted vegetables, so good.
My daughter found a mug cake recipe on Pinterest that she simply loves, but it’s loaded with calories. I’ve been playing around with the ingredients, and I’ve come up with this skinny version. In place of the sugar I used monk fruit sweetener. This is a new sweetener on the market made from vine-ripened monk fruit and it has 0 calories. Monk fruit is native to southern People’s Republic of China and is used for medicinal purposes, as well as a sweetener. For more info on Monk fruit click here. Using regular sugar this cake has 702 calories, the skinny version has 444 calories.
