Happy Monday!

Fall is back and it feels good. I love this time of the year, the cooler temperatures, the food, and the fashions.

Running in the cooler temperature is much easier on the body than running in the summer heat of Texas.  I’ve lived here in Texas for eleven years, and haven’t experienced the annual Turkey Trot, I think I’ll change that this year.

The food, oh the food, from soups, to lattes, to apples, to pumpkins, yeah there are pumpkins everywhere, and just as many different ways to use them in recipes or decorating for the season.

Fall fashions are my favorite, I love layering, using scarves and wearing boots. Here are just a few of my Pinterest pins that represent my style.

Candy at Halloween, cookies, cakes and pies at all the holiday celebrations, coupled with the cooler temps keeping us indoors unfortunately, it’s this time of the year that we tend to pack on those extra pounds.

Here are some tips that I use to stay on track during this time of year.

  •  Be realistic. Don’t try to lose weight, but instead maintain through the holidays.
  •  Smoothies for breakfast. Start your day with a fruit and veggie packed smoothie, they’re loaded with nutrients to give you energy.
  •  Plan time to exercise. I suggest starting your day with exercise, I’ve tried to exercise after work, but I am just so tired and sometimes it just doesn’t happen, especially during the winter months when it’s already dark after work. Dark + tired = relax/sleep.  Exercise is a great way to relieve the holiday stress.
  • Plan workout dates with friends. Working out with friends can be motivating and adds accountability.
  • Use workout apps, here are some I suggest.
  •  Eat before a party. Don’t skip meals to allow for eating at a party, instead eat a light snack of fresh veggies or fruit before your party.
  •  Bring a healthy dish to holiday gatherings.
  •  Don’t deprive yourself, enjoy your favorite holiday foods in moderation.

Simply Marvelous

After a rainy Friday, I stepped outside Saturday morning to this beautiful view.

The morning was cool and crisp, Simply Marvelous weather for running, I was so happy, I was kinda gitty during my run. The temperature change made it feel more like fall, good thing, Sunday was the first day of fall, sometimes called autumn.  Why is it fall the only season with two titles?  Oh well that doesn’t matter, what matters is that I had a Simply Marvelous weekend enjoying fall things.

After seeing all these pumpkins, I was in the mood to bake something with pumpkin, so I whipped up some Pumpkin Blondies. These things are yummy. You can get the recipe over at The Whole Serving.

Around this time of the year one of the favorites at Starbucks is Pumpkin Spice Latte, but I’ve found a money-saving copycat recipe over at Averie Cooks. This recipe uses all-natural ingredients, no fake syrups, and taste great too.

Creamy Summer Squash Soup with Greek Yogurt

This has got to be one of the world’s quickest and easiest soups! I had a late lunch Monday, so I wasn’t very hungry, I had some zucchini and yellow squash in the fridge, wanted something light add easy, so I decided to make soup. Chop, throw into saucepan, season, cook until soft and tender. Transfer to blender, add some greek yogurt and pesto and blend until smooth. Pour into bowl, top with a bit more pesto, sprinkle with parmesan add some crusty bread and it’s time to enjoy. This soup was good, it was very good.  I think you can make with just about any vegetable and if you like a more chunky soup, just reserve some of the veggies before blending to stir in before serving.

Happy Tuesday! I decided to share one of my smoothie recipies I sometimes use after a workout, however you can also use before a workout as well.
I use hemp for protein and sometimes I use a packet of Vega powder, spirulina is great for cell regeneration, which helps with anti-aging, bananas provides potassium to help prevent cramping, kiwi helps to boost immunity, cleans toxins from the body and my two favorite geens kale and spinach which contain a variety of phytonutrients that provide great anit-inflammatory and anti-cancer benefits.
Just like alwayes you can add or omit ingredients to suit your personal taste.

After Workout Mean Green Smoothie

2 to 3 cups of water, sometimes I use almond or flax milk
2 tablespoons, hemp seed or small packet of Vega protein powder
3 tablespoons, spirulina powder
2 frozen kiwifruits
2 frozen bananas
2 cups each of spinach and kale

Put everything into blender, blend until smooth.

I know there are some that want more sweetness in their smoothies, you can add some agave or blend in 1 or 2 dates.

Roasted Fig Spread

What do you do when you have leftover roasted figs?  Make fig butter!  This is the simplest recipe, that’s ready in minutes.

Figs, dates, vanilla, sea salt and a little water is all you need.

A versatile spread that can be used on toast, waffles, mixed into smoothies. oatmeal and even spread on sandwiches.

Early Morning Walk, Not Run

Marvelous, Marvelous, Marvelous…

I was out the door early Saturday morning for my run, but with every step my head was pounding, so I decided to walk my miles, it was so nice out, the early morning is my favorite time of the day for running or in this case walking, and I didn’t want to trun back. I focused on engaging my core, turned out to be a pretty good workout. I was glad I didn’t give up on my workout. When I returned home I did some yoga before having a protein smoothie.

Marvelous was I didn’t let a little headache get in the way of my workout.

I tried a new fruit this weekend, Lychees, I have heard of the fruit, but I’d never tried it. I found some at Trader Joe’s, so I got some to give a try.  After googling, I learned that you peel the outer red skin and eat the white flesh, discarding the seed in its center. I am not sure what I expected, but it wasn’t what I thought it would be, it was juicy and sweet and reminded me of a grape.

Lychee fruit has about 66 calories per 100 g., has no saturated fats or cholesterol, has a good amount of fiber, vitamins and antioxidants.  Lychees are high in oligonol, which is thought to have anti-oxidant and anti-fluenza virus actions. It also helps improve blood flow, reduce weight, is an excellent source of vitamin C, B-complex vitamins and minerals.

I did some recipe testing this weekend using Xylitol as a sugar replacement in these brownie cup cakes, and I found out that my digestive system can not handle Xylitol.  It gave me a major upset stomach. It’s said to be a natural sweetener, but I think I’ll stick to using brown sugar, coconut sugar, agave or maple syrup as a white sugar replacement.

Marvelous that I discovered this on a weekend and not a work day.

The brownies look and taste great, I just can’t eat them. I’ll be testing again using a sweetener that I know I can handle.

What is Xylitol?

It’s a naturally occurring sugar alcohol derived from corn that doesn’t promote tooth decay. It’s a low glycemic impact carbohydrate that is slow to be absorbed in the digestive tract, making its calorie impact 1/3 lower than other carbohydrates.
