Creamy Summer Squash Soup with Greek Yogurt

This has got to be one of the world’s quickest and easiest soups! I had a late lunch Monday, so I wasn’t very hungry, I had some zucchini and yellow squash in the fridge, wanted something light add easy, so I decided to make soup. Chop, throw into saucepan, season, cook until soft and tender. Transfer to blender, add some greek yogurt and pesto and blend until smooth. Pour into bowl, top with a bit more pesto, sprinkle with parmesan add some crusty bread and it’s time to enjoy. This soup was good, it was very good.  I think you can make with just about any vegetable and if you like a more chunky soup, just reserve some of the veggies before blending to stir in before serving.

Marvelous In My Monday


It’s Monday and every Monday Katie at Healthy Diva Life, host the Marvelous In My Monday party.  I’ve decided to join her in the Marvelousiness.


It was a Marvelous Lazy Saturday with a little shopping at guess where, Target of course.  I found some clearance items for food storage that’ll be great for taking my lunch to work. To make room for the new, I had to get rid of the old, I’m donating it to Goodwill.  I haven’t used these in almost a year, so time to let someone else make good use of them.

Sunday was Marvelous baking day.  I found a recipe for Greek yogurt cake on Healthy Recipes Blog, and it inspired me to do some baking. I changed a few of the ingredients, instead of eggs I used one tablespoon of ground flaxseed to three tablespoons of water, for each egg, whole wheat pastry flour,brown sugar, because I didn’t have white sugar. (I don’t use very often) and 1/4 cup of almond milk.

Sunday dinner was a Marvelous pasta dish.  I tossed together steaming hot angel hair pasta, red sauce, pesto sauce, freshly grated parmesan cheese and spicy soy chorizo.


Today is truly a Marvelous Monday, its spring break, I took the day off and I am spending it with my teen daughter.

What was the highlight of your weekend?

Tuesdays are my early work days because I transport the school-age children to their elementary schools, so it was an early rise for me.

I started the day with a delicious green smoothie before leaving for work.


Upon my return to the center after transporting the children I ate my overnight oatmeal, topped with fresh fruit and almond granola.


It was a busy day and I ate lunch while on a conference call. Brussel sprouts and cauliflower bake, sprinkled with pram cheese with a salad on the side. I was  sad when it was all gone, I seriously wanted more.


Later in the afternoon I met with my daughter and her school counselor to discuss her senior year of high school schedule and preparing for college. My how the years have passed, it’s crazy how fast children grow. I’m excited and sad all at the same time.

My afternoon snack was three mandarin oranges and a cup of tea.


After working out I was ready for dinner, a very tasty vegetarian chili garnished with chopped red onions, tomatoes, greek yogurt and hot pepper sauce.
