Starting my days at 5 AM and I getting  home again around 7 or 8 PM, it seemed all I did was work, eat and sleep.  It had me MIA or a few weeks, finally things are getting back to normal and I am so glad, so is my daughter.

She needed to find an invasive species for her Advanced Placement Environmental Science class, and she needed to have a photo of herself with the species, so she ask me to go along to take the photo.

After doing some research, she found that there was a Mesquite tree, which happens to be an invasive species to this area, at Arbor Hills Nature Preserve, which happens to be less than 2 miles from my home. This place is so wonderful for anyone who wants to get out and explore and maybe get in a run, walk or bike ride.

Lucky for us, the day turned out to be absolutely beautiful.



The forecast was for storms, but after some morning rain, it was sunshine and blue sky. Look at how beautiful, I love the color of all the green nature.

The Greatest Gift

Happy Easter!!!

While out walking yesterday I looked up at the beautiful sky and started to reflect on the true meaning of this Easter holiday.


God loved us so, that he sent his only son to die on the cross for our sins, that’s a mind-blowing awesome love.  When I think of all the gifts he has given me, the greatest is the gift of Grace.  With all that I am in my life, the good, the bad and not so perfect, he will always love me and accept me as I am.  So I give him thanks and praise for it all, the good, the bad and not so perfect.  His love is wonderful and his Grace is sufficient.  God is truly good all of the time even when we can’t see the good.

Enjoy your day and give thanks for God’s Love and Amazing Grace!

GratefulAs I reflect on the events of 2012, I can’t help but feel so incredibly thankful and grateful.

Ten things I am grateful for:

1. A loving family.

2. Friendships.

3. A job that allows me to touch the lives of little children and their families. (Center Director of an Early Learning Center).

4. Healthy foods to eat.

5. Clean water to drink.

6. Strong healthy body.

7. Sleep.

8. Being able to go on long runs and enjoy the beautiful nature around me.

9. Listening to music while sipping hot tea.

10. Free Will, God gave us free will and I choose to believe, trust and follow him.

God is BIGGER than any problem I will ever face.

Stop the Spinning

Sometimes I feel like I’m on a spinning wheel that just won’t stop.  Day-to-day activities between work and home keeps the wheel spinning, I needed  to stop the spinning, get off and do something to relax and recharge.  That something for me was gardening.

So off to Callaway’s Nursery I went, where I picked up some veggies I wanted to plant.  With the weather cooling of a bit, this is the best time to plant leaf veggies.

Back at home I turned on some relaxing music and started planting, it’s nice to know that in a few short weeks I will be preparing  these veggies in my kitchen.

I planted a herb garden earlier in the summer, and  look at how it has grown. There’s something wonderful about eating food from your own garden.

I challenge you to stop your wheel, get off, and do something that brings you joy.  Taking the time to stop, relax, and recharge.  It will make us all better moms, dads, sisters, brothers, husbands, wives, employees, and  just better people!

New Green on the Scene!

WOW, I am so excited!  Trader Joe’s has finally opened its new store in my neighborhood.  I could not believe the price of the organic produce.  I am lovin it!

While shopping for my weekly greens I came across Mache, it’s fairly new to the green scene and not widely found. Mache has a mild nutty flavor, some of you may know it as corn salad, rapunzel, field salad, or lamb’s lettuce, this comes from its resemblance to the size and shape of a lamb’s tongue. It is actually not a lettuce but a herb. ($1.99 a bag).

Mache’s nutritional benefits are that the omega-3’s it provides helps to lower triglycerides and improve HDL (good) cholesterol levels, and this reduces inflammation and helps with the risk of cancer and heart disease. Mache also contains vitamin C, iron, folic acid and potassium.

Mache can be used in soups,sandwiches, rice, sauces, omelets, steamed and served as a veggie side dish much like spinach and of course you can use it in salads and add it to your green smoothies.

I made a tasty veggie pizza.
